I normally just leave the fuel rail and intake manifold attached and just remove the head as a whole.
First drain your coolant and your oil.
While you are under your car to drain the oil it would be a good time to remove the bracket that bolts your intake manifold to your block. It would also be a good time to unbolt your header from the cat and the block and to unplug your O2 sensor.
Remove your intake...steps for this depend on if you have stock or after market. Generally it is common sense though
Then unplug all the wires that are plugged in to the head and intake manifold and also remove the dizzy.
Now remove all of the hoses that attach the block to the head, don't forget the ones on the back.
Now just remove the fuel line and vacuum lines.
Now unbolt the header. You can gently set it on the ground, there is no need to take it completely out from underneath the car.
Then remove the valve cover and loosen the timing belt tensioner. Do not remove the tensioner bolt completely. Once the tensioner is loosened and the valve cover is off you can just slip the belt off he cam gear(s).
Now remove the cam shaft(s).
Now you will be able to remove the head bolts and shimmy the head off. Sometimes the dowels cause the head gasket to get stock to the head, this can be a real b**** sometimes if the gasket is stuck to the block as well.
