start off with a rough grit to get the paint off, but don't sand so hard that you put deep grooves in the original paint because with black, all imperfections will show. 180-220 grit is a good start. once the sand paper stops cutting easily, replace the sheet on the sanding block.

if the white paint is factory, all you'll need is to get all the clear off and scuff up the factory paint enough to promote adhesion, since it is already a good base for primer/paint to adhere to. if you're hand sanding, try using a few different sizes of sanding blocks so your strokes are uniformed. if you have to get down to bare metal (which you shouldn't unless the paint isn't original), be sure to use a self-etching or epoxy primer. you'll want to then use a slightly finer grit (320-400) now. you're going to have to build your way up to fine/ultra fine grit. lastly you'll want a few coats of high-build primer to fill out the minor imperfections. just follow the directions of the primer. the higher grit, the smoother your results. you're going to have to wet sand everything. when i did my car, i think i went up to 2000 wet/dry.

take them off to sand. they bulge out funny, so the sanding block will just keep catching the curve and make it uneven. it won't come out good, imo. it'll be hard to get into all the nooks with it on the car. you should mask all the edges of the doors first, too. i forgot about those. they'll get down to bare metal easily.

where it dips, i cut a small piece of rubber hose and wrapped a strip of sandpaper around it. i alternated between that and a rag. you're probably just going to have to try different things and find whatever's easiest for you. i was using a piece of sandpaper and my bare fingers, but that got hot quick.

Have you thought of using automotive paint striper? Way back when, I used that when I wanted to get to the bare metal with minimum work.
