A point and shoot is sufficient. You just need a stable stand (tripod) or steady hand, learn how to use the manual settings (white balance, focus, etc), and use photoshop. They shots may not be as crisp because the resolution isnt as high, but when I turn the reso on my point and shoot up, they dont turn out too bad.
Layers are how people make shots of a see through hood into the engine bay. One shot with the hood open, one with hood closed. They lay the closed bay shot over the open bay, then turn the transparency up in that area so you can see through the hood.
