cooling issue

Ok so my 93LS started overheating the other day (about to the H) i got home and popped the hood while it was still running to see if the fan was working, and of course they were not. I jumped the fans from the plug that plugs into the fan switch, and it kicks on immediately. So i pulled the thermo housing to replace the fan switch and thermostat. Still for some reason first thing in the morning, when i know the engine is completley cold, the temp gauge go straight to normal as soon as i turn the switch on before turning over the engine!! I bleed the system, so now im just lookin for a few ideas on making sure my car doesnt overheat with summer coming up
