Built Head/ What gas to use?

So recently i got my first car! Excited, yes. But i now run into some questions and i need someone to help me out.

The engine is a b18b and only has around 3k miles on the rebuild and the owner i got it off of says it has a stage 3 head and has been port and polished.

My question is what octane gas should i use? Can i use arco gas? or do i have to use shell/chevron?

I use nothing but 100% 93 or 91 octane whatevee the highest is in my 94 ls. The ethanol in the gas really screws your engine up over time unless it's built to handle it.

What exactly is stage 3. What mods are done to the entire engine?

I believe theres crower springs but he didnt mention what other mods there is. There was aftermarket camshafts but he replaced them with oem ones so that it could pass smog. What makes a head "built" anyways? Oh and i put in 89 and no knock or misfire yet.
